  19. Cover and return the pot to the oven, cook until the meat is tender. (about 1 hour).
  20. Take put out of the oven, add in the peas and parsley. Let set for 5 minutes, take out the bay leaves..

Season the beef generously with salt and pepper, and add to the pan. Place your cast iron dutch oven on the stove on medium heat. Add olive oil, onions, and celery. Let saute until onions are translucent. Place stew meat in a plastic bag with flour coating each piece of meat with flour.
