The ingredients needed to make Red Curry:

  1. Take 2 tbsp of Red Curry Paste.
  2. Get 1 can of Coconut Milk.
  3. Make ready 500 grams of Beef, chicken or prawns.
  4. Get 300 grams of of your favourite chopped vegetables.
  5. Prepare 400 grams of leafy greens.
  6. Make ready 2 tsp of sugar.
  7. Get 1/2 of lemon, squeezed.
  8. Make ready 1 1/2 tbsp of Fish Sauce.
  9. Take 1 cup of Rice.
  10. Prepare 2 cup of Boiling Water.

Instructions to make Red Curry:

  1. Heat a pan with some olive oil and add the curry paste when it's hot. Fry it off til it smells yummy.
  2. When the paste smells yummy, add a tin of coconut milk (375mL~).
  3. Stir til the coconut milk goes orangey with the paste..
  4. Add the beef or chicken and let it cook. Add any firm vegetables you like (carrot, watercress, baby corn, onion etc).
  5. Put boiling water and rice in a microwave safe container and put it on for 6 minutes (using an 800W microwave – adjust accordingly.).
  6. After the rice has finished; take it out of the microwave, give it a stir and add a little more water if it's looking dry. Put it back in the microwave for however long you put it in the first time..
  7. While the rice finishes cooking, add the; leafy greens, sugar, fish sauce and lemon juice. If you're using prawns, put them in now too..
  8. Strain the rice when done and in a strainer, run it under hot water for a few seconds to wash the excess starch away..
  9. Serve the curry over the rice.
